Lasanga

INGREDIENTS:

12 strips of lasagna

2 lbs mild or hot Italian sausage

11/2 cups sliced mushrooms

1 cup chopped onions

1-2 dashes season salt

Pepper

1 tsp. garlic powder

2-5 tbsp. oregano

1 teaspoon thyme

1 tbsp. parsley

5 - 8oz cans of tomato sauce

32 oz pkg. mozzarella cheese

16 oz container ricotta cheese

8 oz pkg. shredded parmesan cheese

  Prep/Cook Time:  ~ 1 hour
BOIL 5 gallons of water.  add lasagna noodles to boiling water and cool per directions on box.  Rinse in cool water and let sit.
BROWN Italian sausage in skillet.  Drain grease. 
ADD Add chopped onions, mushrooms and seasonings. Once mushrooms and onions are cooked, add tomato sauce.  If necessary, add additional oregano to taste.
Simmer on low heat and continue to stir.
PREHEAT oven to 350oC
MIX mozzarella and ricotta cheese in bowl

ADD

- Thin layer of meat sauce (approx. 1/2 cup) to baking dish. 

- 4 strips of lasagna. 

- 1/3 of cheese mixture.  Sprinkle parmesan on top. 

- Repeat layers by adding 1/2 of meat sauce, four lasagna noodles and a layer of cheese.

- Add last layer of noodles.

- Top with remaining meat sauce.

- Add remaining cheese mix and top with grated parmesan cheese.

COVER lasagna with foil and baked for 35-45 minutes, or until cheese on top starts to brown.
REMOVE from oven and let lasagna cool for 10 minutes.
SERVE with garlic toast and tossed salad.
