Shrimp Fondue

INGREDIENTS:

1/2 lb. shrimp, peeled and de-veined

Fresh or frozen crawfish tails (optional)

4 - 6 oz. of sliced mushrooms

scallions

4 cups shredded cheddar cheese

2 cups shredded Monterey jack/colby cheese

2 cups milk

1 tbsp Worcestershire sauce

2 tsp. ground dry mustard

1 clove garlic, peeled and crushed

3 tbsp flour

  Prep/Cook Time:  ~ 30 minutes
SAUTEE butter, mushrooms, shrimp and crawfish tails until done.
MIX together milk, Worcestershire sauce, mustard, garlic and flour in a medium sauce pan over low heat.  Heat until almost boiling.  Gradually stir in shredded cheese.  Continue heating until all cheese has melted.  Add seafood mixture and continue to stir.  Keep the mixture warm and melted in a fondue dish.

TIPS:

This recipe makes a lot of fondue.  You may reduce the recipe, just keep the ingredients proportional.

You may use all cheddar cheese if you prefer.  Monterey/colby may not melt has smoothly as cheddar.

If you just want to make cheese fondue, eliminate the seafood, scallions and mushrooms.
